A simple to make, versatile syrup that goes great in tea, smoothies or over ice cream. Use the reserved ginger to make candied ginger, spice up biscuits, cakes and flans or as a delicious topping for ice cream.
Ingredients
- 110g ginger, peeled and thinly sliced (about 3/4 cup)
- 1 cup sugar
- 1 cup water
Method
Bring ginger, sugar, and water to a simmer in a small heavy saucepan over medium-low heat, stirring until sugar has dissolved, then gently simmer, uncovered, 30 minutes. Strain through a sieve and reserve ginger for another use, then cool to room temperature.
The reserved ginger can be used in many ways including ginger shortbread, candied ginger or as a topping on a flan or vanilla ice cream.
