Elevate your haddock, or any other white fish, with this rich mustard marinade.

Note, add overnight marinade time to the prep time listed above.

This marinade can also be used with rabbit, chicken or pork.

Ingredients

  • 2 shallots, peeled and finely sliced
  • 2 garlic cloves, peeled and crushed
  • 5 tbsp Dijon mustard
  • A few sprigs of thyme, thick stalks stripped (or 2 tsp dried thyme)
  • 1 tbsp cider vinegar
  • 120ml olive oil
  • 1 tsp brown mustard seeds
  • 4 pieces of haddock or other white fish, skinned
  • Salt and black pepper

Method

Put the shallots, garlic, mustard, thyme and vinegar in the food processor and whizz to a smooth paste. Add all but a tbsp of the olive oil, salt and pepper, and whizz for a bit longer. Pour into a tray and thoroughly coat the fish. Sprinkle with the mustard seeds.

Cover and leave overnight.

Take the fish out of the fridge. Preheat the grill to its highest setting for a good 7-10 minutes. Place some foil in the grill tray and pour on some of the remaining olive oil.

Place the fish in the tray and put under the grill for about 5 minutes, and turn the pieces over. Then grill for another 5 minutes until the fish is cooked, at which point it should break into large flakes.

Serve straight away. Timings on the fish will depend on the thickness of the pieces you have.
