
Polish Christmas Gingerbread (Pierniczki)

These delicious gingerbread packed with Christmas spices are a Polish favourite that can be enjoyed any time of year.
Quick and easy to make, the dough benefits from resting for a couple of days if you can wait that long.
Ingredients
- 250g honey
- 250g brown sugar
- 100g butter
- 600g plain flour
- 1tsp cinnamon
- 2tsp ginger
- 1 tsp allspice
- 2 eggs, beaten
- 5g baking soda
- 10g cocoa
Method
Melt honey, sugar and butter. Mix all the dry ingredients. Add eggs and honey mixture and knead. Wrap it in a clingfilm or place in a sealed container and leave in a fridge for 2-3 days. You can bake it directly once the mix has chilled enough to form, the flavours won't be as infused as the rested dough however.
Divide the mix into around 30 pieces and roll into balls or roll out into a 1/2cm thick sheet and use your favourite cutter shapes. They are normally made small, but you can make them bigger as you like.
Bake at 180C for around 8 minutes, depending on thickness.
Traditionally, these are decorated with icing or powdered sugar once cooled.
